You wake to the rhythmic tonk-tonk of goat bells echoing off limestone walls and the scent of sun-baked pine needles. This isn't the neon-lit Mallorca of the tabloids; this is the high-altitude silence of the Serra de Tramuntana. The island is effectively a continent in miniature, shifting from rugged peaks to sleepy agricultural plains in a single hour's drive.

In Palma, the gothic cathedral offers a retreat where the air is always ten degrees cooler and smells of ancient incense. Outside the city, the landscape turns to gnarled olive trees and ochre-coloured villages like Fornalutx, where the terracotta tiles feel warm underfoot long after the sun sets. Then there are the calas—not vast sandy stretches, but deep gashes in the coast where the water is so clear it looks like glass against the white sand floor.

But be warned: Mallorca is a victim of its own beauty. In July and August, the narrow mountain roads become a bottleneck of rental cars and the most famous coves require a 45-minute hike just to find a square metre of space. It is an island that demands a car and a tolerance for heights. Go in May or September when the sea is still warm but the crowds have thinned. Pair a few nights in Palma for the food scene with a week in a restored farmhouse near Pollença.
